Cold tomato consommé with brunoise of new season jerusalem artichoke, mint, tapioca pearls & spiced olive oil.


Poached witch flounder, blanched green asparagus, split kefir vinaigrette with sweet peas and chive oil, avocado purée, and a warm lovage butter filled souffle made from smoked trout and cockerel, finished with asparagus hollandaise & coral tuille.


Roasted rump of lamb, smoked salsify purée, mushroom jus, blueberries two ways, cannelloni with cold roasted potato salad and a crispy wheat cracker.


Caramelized puff pastry with a symphony of rhubarb and strawberries. Elderflower mousse, strawberry coulis, strawberry sorbet & tonka bean ice cream.

Coffee & Petit Four

We conclude with black coffee and tea accompanied by petit four & the chef’s selected digestifs.
