Appetizer

Hand peeled shimps on a spiced salad of wheat grains, tomato, and lovage, new season spring vegetables finished with a lime & tomatofoam.

Starter

Slow cooked cod with rhubarb and variation of celeriac, pickled mustard seeds, basil mayoniase, samphire and served with lightly smoked cold siphon of mussels.

Main

Braised Pork with trufle jus, peas and chives, served with daikon redwine confit, wild garlic & potato souffle, wild garlic foam & blueberry gel.

Dessert

Poached peach “Bellini” en surprise, peach mousse and classic chocolate bisquit, whipped mascarpone & salted chocolate ganache served with a sorbet of lemon and mango.

Coffee & Petit Four

We conclude with black coffee and tea accompanied by petit four & the chef’s selected digestifs.
