Appetizer

Wasabi panna cotta with hand-peeled shrimp, egg yolks cured with dill and pumpkin seeds and sweet pickled pumpkin.

Starter

Salted Cod with fennel a la orange, tangy soy and ginger vinaigrette with brown butter, shallots, ginger, chili, garlic, jerusalem artichoke, and toasted hazelnuts finished with a tapioca and fennel crisp.

Main

Sweet and spicy duck breast accompanied by our regional Christmas cabbage puree, sauce Kambambuli with aged rum and lingon berries. Potato fondant a la crème and kale.

Dessert

Carpaccio made from dried fruit, almond pound cake topped with burnt vanilla Italian merengue and cherry syrup. Pistachio ice crème and cherry sorbet. A part: a classic Danish Christmas dessert, “Ris a la mande”.

Coffee & Petit Four

We conclude with black coffee and tea accompanied by petit four & the chef’s selected digestifs.
