Appetizer

Horseradish mousse, hand-peeled shrimp, shallots, peas with dill oil and finished with a Tuiles.

Starter

Roasted cod served on a purée of cauliflower, salt-pickled gooseberries, ponzu-infused nuts, sweet and sour lemon curd, lobster foam, finished with a small salad and hazelnut snow. 

Main

Glazed roast of beef, pepper sauce, crushed pork crackling, creamed spinach and leek in a crispy puff pastry topped with sorrel, tempered jerusalem artichoke souffle with pickled rhubarb. 

Dessert

Chocolate cake, pickled berries and burnt meringue, raspberry sorbet, blueberry coulis and dehydrated blueberry. 

Coffee & Petit Four

We conclude with black coffee and tea accompanied by petit four & the chef’s selected digestifs.
