Appetizer

Brandade of cod on a set tomato consommé with basil mayonnaise, dehydrated nicoise olives, pickled sweet peppers & crispy fusilli.

Starter

Salmon three ways: salmon mousse from hot smoked salmon, graved lax with dill, and a cold smoked salmon snow. Jerusalem artichoke & apple carpaccio, jerusalem artichoke chips, jerusalem artichoke purée.

Main

Truffle-glazed, slow cooked veal brisket, port wine sauce with diced beetroot. Caramelized onion and pickled pearl onion tart accompanied by potato-celeriac Guglhupf and a celeriac cream & parsley oil.

Dessert

Caramel cake with salted caramel cream, baked plums and coffee ice cream. Served a part our version of the traditional “Plums In Madeira”: Madeira-soaked plums with white chocolate foam & seasonal crunch.

Coffee & Petit Four

We conclude with black coffee and tea accompanied by petit four & the chef’s selected digestifs.
